Best way to model moving interfaces which cause mesh deformation in the domain

Hi all,

I am trying to solve a mass transfer problem in COMSOL. It is diffusion of water into oil. The geometry consists of spherical water droplet insider a larger spherical oil droplet and water is diffusing from the surface into the oil phase with some Diffusivity D. As a result of diffusion, the water droplet shrinks to conserve mass. I need to solve for concentration of water in the oil phase and am using Transport of Diluted Species (with diffusion only) for that purpose. The boundary conditions are specified concentration at the oil-water interface (solubility of water in oil) and zero concentration of water at the far boundary of oil phase. The problem is that as water droplet shrinks the domain of oil phase is changing (increasing) and hence the meshing will change. What is the best way to model this: moving interface, deformed geometry or ALE?
