Color range in animations

Hello,

In both 3.5a and 4.0 versions, the animation color range is different from the range for images taken at different times.
For example, a video running from 0 to 300s has a range of -187 to 293. However, when one looks at the same data at t=300s, the maximum value is 89. Is there a reason why the range in animation does not match the range in pictures.
I am a little concerned because the contrast in the video is not as great as that an individual image.

I am sure someone must have looked into this before and I would welcome any suggestions, help.
