Phase 2 appears from nothing in Microfluidics module

I'm working with the microfluidics module for a droplet generation problem. After some time working on this, I got these results (in annex). Both files are volume fraction of phase 1 plots. The GIF only has the phase field from 0 to 0.5 (it helps me visualize the droplets) and the TIFF is the whole picture at the end of the simulation run.
My issue here is that droplets seem to be forming out of thin air (without being a consequence from the junction) and looking to the entire phase field plot, the phase 1 (oil) never gets to 1 in the flow direction.
I have set my thickness interface to half the maximum mesh element size (which is 0.0546 mm / 2 = 27.3 μm), so I would expect the interface to change from 0 to 1 (and vice versa) in a distance span of 27.3 μm, which doesn't seem to be the case. The simulation span goes from 0 to 500 ms in 1 ms steps.
What is the cause for this and how can make this better?
