Simulation temperature profile and moisture loss of vegetable

Hello everyone, I'm working on a modelling to simulate the temperature profile and moisture loss of vegetable under different storage conditions. I have run the programme but the initial concentration at the surface and the middle of fruit is not the same. Does anyone know how to fix this problem? Thank you in advance.
