how to impose initial value for water table in soil column?

Hi ,

I am working with subsurface flow, trying to solve Richards' equation.
My question: if I want to impose water level that is not constant and is changing in my geometry as an initial value, what should I do?
Attached a my geometry.

Should I define interpolation function for the water table?

I am looking forward to hear any suggestion.
